The Garda DOP extra virgin olive oil from Esveal carries a traceable guarantee of origin: only olives grown within the precisely delimited DOP zone around Lake Garda are allowed to bear this designation. The Garda DOP Consortium's production disciplinary sets out the growing area, permitted olive varieties, harvest timing and processing procedures. Each bottle carries an individual lot number as proof of full traceability from grove to bottle.
What the Garda DOP Certification Means
The Protected Designation of Origin (PDO) is a geographical certification: it confirms that the olives come exclusively from the Lake Garda territory, which stretches from the Brescian shore to the Veronese side. It does not in itself certify the farming method — that is what our separate organic certification covers. The Consortium requires harvesting by hand or with mechanical means that do not damage the fruit, milling within 48 hours of harvest, and an acidity level below 0.5%. Each batch undergoes independent chemical and sensory analysis before certification is granted.

The Olive Varieties of Lake Garda
The character of Garda DOP oil is shaped by varieties native to the lake's shores, cultivated here for centuries under the influence of the mild microclimate created by the water mass. The principal varieties are Casaliva and Drizzar, both autochthonous to the Garda area, alongside Leccino and Moraiolo. Casaliva and Drizzar give the oil its fruity lightness and delicate aroma; Leccino contributes a pleasant sweetness; Moraiolo brings the characteristic bitter and peppery finish. This combination of local varieties and specific territory produces an oil with a distinct identity that cannot be replicated outside the Garda zone.
