The organic extra-virgin olive oil flavoured with wild fennel is prepared on our farm estate in Bardolino. It comes from the combination of cold pressing of Italian olives from organic farming with the seeds of wild fennel grown on our estate. The Organic Extra Virgin Olive Oil flavoured with fennel Esveal comes from the ancient Mediterranean tradition of flavoured oils. From the infusion of wild fennel seeds in the oil we obtain extra virgin olive oil with fennel. It is particularly suitable to accompany a large number of dishes, especially pasta dishes that will be enriched with its magnificent fragrance.

USAGE ADVICE
Extra virgin olive oil with fennel is used to season pasta dishes. On steak and meat in general, wild fennel oil gives a fresh scent and makes them more digestible.

WILD FENNEL: AN ANCIENT PAIRING
Wild fennel (Foeniculum vulgare) grows spontaneously throughout the hillside territory of Bardolino and the eastern Garda shoreline, where the mild microclimate encourages its vigorous development. Unlike cultivated fennel, the wild variety has a more concentrated, resinous aroma — closer to anise and tarragon — that blends exceptionally well with the light, fruity character of a quality organic extra virgin olive oil.
In Venetian and Veronese culinary tradition, wild fennel has long been used to flavour freshwater fish from the lake, in particular lavarello (whitefish) and trout, as well as pork and game. Our organic fennel oil captures this tradition in a bottle: the seeds are cold-infused into the base oil, releasing their aromatic compounds slowly without altering the structure of the oil itself.
The low acidity level guarantees a product that is both delicate enough to dress raw salads and robust enough to hold its own in cooked dishes. It is also particularly suited to preserving vegetables in jars, where its antimicrobial properties add a functional dimension to its aromatic one. Both the fennel and the base oil carry full organic certification.
